Pei Wei’s History
Pei Wei is an outgrowth of P.F. Chang’s China Bistro. The original location was opened in Scottsdale, Arizona in 2000 and was designed to compete in the fast casual market while P.F. Chang’s stayed competitive in the more full-service restaurant business.
The P.F. Chang chain, including Pei Wei, was sold to Centerbridge Partners in 2012. As of 2015 there were 200 locations of Pei Wei, however, closings in Ohio and Louisiana the following year diminished that total number.
