Einstein Bros History
Einstein Bros was originally conceived by the Boston Chicken corporation (now known as Boston Market) as a way to offer breakfast items. The chain opened in 1995 after Boston Chicken acquired a number of smaller bagel chains. The early expansion included both buying out smaller, independently owned bagel restaurants as well as the construction of new locations.
By 1997 there were 500 locations of Einstein Bros making it the largest chain focused on bagels in the nation. In recent years a concerted effort has been made to expand the menu to include a large variety of lunch and catering fare. JAB Holding Company and BDT Capital Partners acquired the chain in 2014.
