Boston Market’s History

The first Boston Market restaurant was opened in Newton, Massachusetts by Arthur Cores and Steve Kolow in 1985. The restaurant chain was originally known as Boston Chicken due to the focus on fire roasted rotisserie chicken as the main menu item.

In 1995 the name changed to the now famous Boston Market and the menu was supplemented with homestyle dishes such as meatloaf, roasted turkey, ham and a variety of sandwiches. Popular dinner entrees were also expanded into a grocery store line of foods starting in 1999. By this time the chain operated over 1,100 restaurants and was grossing over $1 billion dollars annually.

Efforts to extend to international markets troubled the chain which declared bankruptcy in 1998, later to be bought out by McDonalds in 2000. It was sold to Sun Capital Partners in 2007 and now operates in over 450 locations.
